Seafood Rice Noodle Soup – Hủ Tiếu Hải Sản Recipe

  • 200g rice noodles
  • 200g mixed seafood (shrimp, squid, mussels, etc.)
  • 1 liter seafood or chicken broth
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 carrot, julienned
  • 1/2 cup bean sprouts
  • 2 green onions, chopped
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh herbs (cilantro, basil) for garnish
  • Lime wedges for serving


  • Prepare the rice noodles according to package instructions. Drain and set aside.
  • In a large pot, heat some oil over medium heat. Add the minced garlic and chopped onion, sauté until fragrant and golden.
  • Add the mixed seafood and stir-fry for a few minutes until cooked through.
  • Pour in the seafood or chicken broth and bring to a boil. Reduce heat to low and simmer for about 10 minutes.
  • Add the julienned carrots, bean sprouts, and green onions to the pot. Cook for an additional 2-3 minutes until the vegetables are tender.
  • Season the soup with fish sauce, soy sauce, sugar, salt, and pepper to taste. Adjust the seasoning according to your preference.
  • To serve, divide the cooked rice noodles among serving bowls. Ladle the hot soup over the noodles, making sure to distribute the seafood and vegetables evenly.
  • Garnish with fresh herbs such as cilantro and basil. Serve with lime wedges on the side for squeezing over the soup.
