Shrimp and Pork Noodle Soup

Ingredients:

For the broth:

  • 4 cups chicken broth
  • 2 cups water
  • 1 onion, peeled and halved
  • 2-inch piece of ginger, sliced
  • 2 cloves garlic, smashed
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon fish sauce (optional)
  • Salt, to taste

For the soup:

  • 200g medium-sized shrimp, peeled and deveined
  • 100g pork tenderloin, thinly sliced
  • 150g fresh egg noodles
  • 1 cup bok choy or baby spinach, chopped
  • 1 small carrot, julienned
  • 2 green onions, sliced
  • 2 tablespoons vegetable oil
  • 2 teaspoons soy sauce
  • 1 teaspoon sesame oil
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving
  • Sliced red chili, for extra heat (optional)

Instructions:

  1. In a large pot, combine the chicken broth, water, onion, ginger, garlic, black peppercorns, and fish sauce. Bring to a boil and then reduce the heat to let it simmer for about 20-30 minutes. Season with salt to taste. Strain the broth and discard the solids.
  2. In a separate pot, cook the fresh egg noodles according to the package instructions. Drain and set aside.
  3. In a wok or skillet, heat the vegetable oil over medium-high heat. Add the sliced pork and cook until it’s no longer pink. Remove the pork from the wok and set aside.
  4. Using the same wok, add the shrimp and cook until they turn pink and opaque. Remove the shrimp from the wok and set aside.
  5. In the wok, add a bit more oil if needed. Add the julienned carrot and sauté for a couple of minutes until slightly softened. Add the bok choy or baby spinach and stir-fry until wilted.
  6. Pour the strained broth back into the pot and bring it to a simmer. Season the broth with soy sauce and sesame oil to taste.
  7. To serve, divide the cooked egg noodles among serving bowls. Top with the cooked pork, shrimp, sautéed vegetables, and sliced green onions.
  8. Ladle the hot broth over the noodles and ingredients in each bowl.
  9. Garnish the Shrimp and Pork Egg Noodle Soup with fresh cilantro leaves and a lime wedge on the side.
  10. For an extra kick, add sliced red chili to your taste.
  11. Serve the soup hot and enjoy the comforting flavors of this delightful dish!
